Here's a little something something for the chill. 

I've always wanted to be a pie baking, herb growing & make her own sauces kind of mama and recently I made some headway. An inch but definitely closer :) 
My boyfriend is constantly complaining about the lack of "hot stuff" in my kitchen so, moved by his haggling I invited girlfriend, fellow mom and caterer, Lulu Stone, over to keep this relationship together because I was at my wits end and I just couldn't swallow any more of his "Mmmm, this is delicious babe but you know whats missing ... ." commentary. She also has a food processor so cue in the collabo! 

As you can see, Lulu and I focused at the task at hand.

Prep time: 5 mins Cooking time: 20 mins Total time: 25 mins
2 red onions, peeled and roughly chopped
1 head of garlic, cloves peeled and roughly chopped
1 cup chillies, stems removed
2 red bell peppers, seeds removed and roughly chopped
3 ripe tomatoes, skins removed and roughly chopped
4 tablespoons olive oil
juice and zest of 3 lemons 
⅓ cup red wine vinegar
2 tablespoons sugar
1 tablespoon salt
1 teaspoon cracked black pepper
2 bay leaves 
1 tablespoon dried oregano
1 tablespoon smoked paprika

Combine all the ingredients in the bowl of a food processor and mix until all the ingredients are finely chopped and the mixture is quite saucy. Transfer to a saucepan over medium heat and simmer for 20 minutes, stirring every few minutes to prevent the sauce from burning. After 20 minutes, check the seasoning and adjust. The sauce should be well balanced with a good kick of spice and sourness from the lemon and vinegar. Pour into Consol jar and keep in the refrigerator for up to 2 weeks.

  1. My mother makes such type of sauce and honestly its far better than the company made. It has some good taste and adds some brilliant flavor to the dishes. Good to see it again.
